Pumpkin is a very popular flavor and seems to be in everything this time of year! Pumpkin is nutrient-dense and low in calories so it is a great food to add to recipes. Pumpkin puree can be used in place of butter and oil in baking, and used in stews and chilis, pasta recipes, and breakfast recipes. The recipe below is an easy breakfast recipe that serves many people so it is ideal when hosting overnight guests during the holidays.
Pumpkin Pie Spiced Oats
2 cups organic steel cut oats
1 15 oz. can organic pumpkin puree (or 2 cups of puree from a cooked pumpkin)
7 1/2 organic whole milk
1 Tablespoon pumpkin pie spice
3 teaspoons cinnamon
3/4 cup light brown sugar
1 teaspoon vanilla extract
1 teaspoon kosher salt
Optional toppings: dried cranberries, toasted chopped nuts, honey, cacao nibs, organic maple syrup, cream, or chia seeds.
Combine all ingredients (except toppings) in slow cooker. Cook for 5-6 hours on low. Serve with any of the optional toppings.
