Mocha Energy Bites (Makes 24 bites)

These bites are small in size but are big with health benefits. They contain chia seeds, which are referred to as a "superfood" because they are rich in many vitamins and minerals and omega 3s. The cacao nibs are also rich in minerals and fiber, and the nuts are a good source of healthy fats. This snack is gluten free, sugar free, and grain free, is easy to make, and tastes yummy!


1 cup raw hazelnuts (or almonds)

2 tbsp instant decaf coffee granules

2 tbsp vanilla protein powder

2/3 cup of Medjool dates (pitted)

4 tbsp cacao nibs

2 tbsp chia seeds

Pinch of pink Himalayan sea salt


Place nuts, coffee granules, protein powder, and sea salt in a food processor and grind into coarse flour. Add the dates and process into a dough. Add the cacao nibs and chia seeds, and process again. Check the consistency: if the dough is not sticking together then add water. Start with 1/2 tsp at a time until it holds together. If the dough is too wet, add a bit of protein powder.

Place the dough on a large sheet of parchment paper on a cutting board. Wrap the dough in the parchment paper and press the dough into a 1" thick slab. Unwrap the dough and either cut it into 24 squares or roll it into 24 balls.

The bites can be stored at room temperature in an airtight container for several weeks or frozen for several months.
