Butternut Squash with Fresh Sage

Here is an easy recipe for a butternut squash dish. Unlike many other recipes using winter squashes, this is not a sweet dish but rather a savory one. Enjoy!

Ingredients: Serves 8

2 Tbsp organic extra virgin olive oil

1-2 small shallots, minced

4 cups butternut squash, cut in 3/4" cubes

2 pinches ground nutmeg

6-8 fresh sage leaves, cut lengthwise into thin strips

1 bay leaf (optional)

2/3 cup organic gluten-free vegetable broth

Unrefined sea salt and black pepper to taste


1. Place the olive oil and shallots in a deep skillet and cook over medium heat until the shallots begin to color.

2. Add the butternut squash cubes, season with salt and pepper, and saute until slightly caramelized on all sides.

3. Add the nutmeg, bay leaf, sage, and vegetable broth. Cover and cook until the squash is tender but still holding its shape (about 8 minutes).

4. If extra broth remains, cook down while stirring the squash. If the squash is not done to your liking, remove the dish from the heat, leave covered, and allow to steam a few minutes.
